Story of the week...



Mika: Well.......week come to an end again....before I start meowing to Yong on her slacking routine lets check on what Yong treats to herself on her not so famous baking skill.....pur...meow.............



Once she got her rectangular pie tin from Sunlik, she straight to look for the apple tart recipe in Kak Rima's blog. The taste what I heard is delicious and yummy......well luckily not my type of food. Wonder Yong can make chicken pie next time.....hmm....hmm...



Next, when she found that she had pastry puff in fridge, she want to try to make fruit vol au vent but she made a mistake by not roll the pastry and it looks ugly after it baked. Only one on the left second row looks decent . Better try again in your next baking day, Yong....



Aaaaahhhhhh, this look refreshing right! May is a hot month now, so she got idea to prepare this summer drink.The lemon barley cordial not a favourite cordial to the family. Before it become rotten, she made this cold drink by just adding a sparkling water, ice and garnish with mint leave.....meooooowwww! That my interpretation of Yong's joy when she taste it!

What's hot in the oven?

Yong: I will posting what I'm baking or cooking to share with you all. I guess Monday will be my spot. So no Monday mancat for Mika but what hot in the oven will perk up your Monday....I hope....:o)

Saturday, I bought a pack of blackberry and decided to make topping to serve with vanilla ice-cream...then I thought that just so simple then I check on Kak Rima's recipe....well I choose Molten chocolate cake to pair with it. MOLTEN CHOCOLATE CAKE


The batter before get into the oven. Kak Rima, is there something not right with my batter?


It's bit overdone. The center not have that lava of chocolate when I spoon it. Well....I still love it!


I serve it with vanilla ice-cream and blackberry sauce. Awesome! Do try and you feel so drooling....yummieh!

Show of......


Yong: February is birthday month for Mom and Aqie, yesterday we celebrate Mom's birthday. I manage to bake simple and easy rainbow cake. So let me show of my rainbow cake.....:o)


SIMPLE RAINBOW CAKE

Just bought any plain cake mix, follow instruction from the box........very easy right!


Then, divide into 4 if you use small baking pan, colour them with your favourite colour.........


I use buttercream to spread each layer and then top the rest of the cake with buttercream too and just using icing decorating alphabates to wrote "happy birthday". I don't dare to attempt to do difficult design...:op


Taadaaa.....! A simple and delicious cake for Aqie to enjoy who are so trilled to eat it.


Mika: Now it's time for me to show of ! Move over Yong!


My powerful claws are force to be reckon for every cats in the neighbourhood!


This soft paws too make every one in the house falls in love.......Ooops! Sorry its a bit off white! Must ask Yong to take bath this weekend.

Wonder what we do in January? Part 1

Yong: We were so sorry for badly ignore this blog for almost a month. I'm really....really super busy with work and almost all day got home at 8 or 9 pm. So you can guess it, after freshen up I'm so tired and very easily fallen a sleep even watching my favourite show on tv. I also postponing my baking until I feels so restless that I decided to do something during the Chinese New Year holiday. I baked bread and butter pudding and finally I tried my skill to do decorated cupcake after 2 month attended the cupcake class from Edi (adorablecupcakes.blogspot.com)

Here the recipes for the bread and butter pudding. I just use half of the ingredient as I only baked for two people only.


BREAD & BUTTER PUDDING

Ingredients:
8 eggs
1 liter fresh milk
1 cup sugar
1 loaf bread, each cut to 4 pieces(I use baguette)
100 gm butter
40 gm mix raisins(yellow & blackcurrant)
Pinch of salt
1/2 ts vanilla

Method:
1) Spread all over with butter then cut the bread into four pieces.
2) Grease the pan and put the bread in the baking pan, each top of it with the mix raisin.
3)Whisk egg and sugar until well combined. Then add the fresh milk, vanilla and salt and continue whisk until combined.
4) Pour to the bread and let it sit for 10 minutes
5) Bake at temp 165C for about 25 to 35 minutes


I served it with chocolate ganache instead of vanilla sauce



I made the cupcake a day before and I decorate it the next day. However I dislike the colour I bought. Well, this a first try and I'm still...... pretty impress with it. Below cupcake was for us to indulge....



And this I bought to the office and guess what my colleagues loved it! and they can't wait for me to take the first order....har..har...they are my food tester!

My hand still not so sturdy to decorate it and I still copy design from Edi's class. Will practice more and make it purrrrfect!

Apple muffin.....all time favourite...

Yong: Hi everybody.......today I can't resist anymore to bake something, Mom said there are two green apple in the fridge. So....what cross my mind is apple muffin! This is my favourite and it's been a while I bake them. It's so easy and I got this recipe from my step mother.

Ingredient:
2 green apple
1/2 orange (only need the juice)
1/2 cup caster sugar
1/2 cup vegetable oil(I use canola oil)
1 1/4 cup flour
1 teaspoon soda bicarbonate
1/2 teaspoon salt
1/2 teaspoon cinnamon powder
1 teaspoon vanilla essence
1 egg
1 tablespoon golden raisin ( I use handful because I love golden raisin)

Method:
1) Dice cube the green apple then put handful of golden raisin & pour the orange juice. Put aside for 5 minute

2) Mix dry ingredient - flour + soda bicarbonate + salt+cinnamon powder

3) Mix the wet ingredient - whisk sugar + egg + oil until combine

4) Pour half of the flour and mix together then put 1/2 of the apple mix then pour the rest of the flour and apple, fold gently & mix until well combined

Yong: Oooops......this is not your dinner.....give me 2 minutes ok....:o))


The batter and ready to put in the baking tray. Line the baking tray with paper cup. Pre-heat the oven 300F (gas oven) and bake about 25 to 30 minutes.


The muffin ready to eat now!

Raya story........baking


From the last post.....well....previous post, I told you I baked 2 types of cake, blueberry cheese cake, chocolate cake and cupcake. The result of the chocolate cake was not to my expectation, I use a wrong size baking pan and the frosting was not thick enough so the result not so good. Anyway, my cheese cake not bad at all, everybody love it and the cake finish in one day! I found this recipe in someone blog last year, sorry I forgot who it is.....:op . Let me share the recipe with all of you. I think this is the easiest cheese cake recipe.

BLUEBERRY CHEESE CAKE

Ingredient A - Biscuit Base
120 gm chipsmore biscuit
2 tbsp butter

Method:
1. Grind the biscuit, then mix with butter.
2. In springform 8 inch baking pan, put aluminium foil or baking sheet and press the buttered biscuit in the baking pan. Bake with 150 C about 10 min

Ingredient B - Filling
250 gm Philidephia cream cheese
70 gm butter
120 gm fresh cream/whipping cream
120 gm caster sugar
50 gm cornstarch
30 gm superfine flour
1 tsp vanilla
4 telur ayam [split egg yolk & egg white)]
2 tbsp blueberry filling

Topping:

Blueberry filling(bought ready made from baking shop)
Or you can use strawberry filling


Method:

1. - Preheat the oven 150 C

2. - Beat the egg white until fluffy, set aside

3. - Beat the cream cheese, butter,caster sugar and fresh cream until fluffy.

4. -Put in the egg yolk one at the time and vanilla essence, then beat again

5. -Sifted both flour and using spatula pour it in the cream cheese batter.

6. - Gently folded the flour until well combine, then add in the egg white and the blueberry filling. Folded gently until well combined.

7. - Pour the batter in the biscuit base and bake for about 70 to 75 min.

8. -Let the cake sits in the oven about couple of hours after bake. Then cool it in the fridge for 4 hours before serve it with the blueberry topping.

Future Malaysia Master-chef Junior

Yong: This coming Eidil Fitri will be a bit gloomy since we are unable to "balik kampung" since Aqie's daddy admitted to hospital on Saturday due to dengue fever. Not sure when he will discharge and since yesterday the fever has slightly decreased but doctor still keep monitor on his blood plalete level.


Well, we must keep up beat the celebration though, and we had a future master-chef junior in the making too......:o)) Aqie so excited to help me to prepare the cake. I asked him to pour the flour into the choc cake batter.

Aqie: Hmmmm......Mama Yong.....sedapnya bau........


Yong: Mika just look us from behind......Don't be jealous ok.......


Yong: Aqie help me to smash the chipsmore cookies for blueberry cheese cake base. He really give a good smash until his hand hurt......

Aqie: Mama Yong.......dah ke ni?? Aqie penat dah tumbuk ni!


Both cakes ready for garnishing. Will show in the next enty ok.....so wait.......


Aqie also help me to make chocolate chips cookies which I prepare for my Auntie and also for ours too... last two weeks.


Aqie: Dah siap Mama Yong!


Yong: Hope you had a good Eidil Fitri preparation and don't over work ok.........

Red velvet cupcake

Yong: Well.....I should post this yesterday but I was so sleepy to continue to upload the photo. Anyway its never too late to wish Happy Father's Day to all great father, daddy, ayah,abah.....and many name that relates to our special man.


As Mika said from last post I fulfill my sister promise and make red velvet cupcake. I made it!


Aqie happy assists his Daddy cutting the cake, he even open the gift for his Daddy. By the way, he also gave his present......the new hair cut!



Back to my red velvet cupcake, I got the recipe from Food Channel Network and it was from Paula Deen. I like it! Let me share you the recipe:

Ingredients

2 1/2 cups all-purpose flour

1 1/2 cups sugar

1 teaspoon baking soda

1 teaspoon salt

1 teaspoon cocoa powder

1 1/2 cups vegetable oil

1 cup buttermilk, room temperature

2 large eggs, room temperature

2 tablespoons red food coloring

1 teaspoon white distilled vinegar

1 teaspoon vanilla extract

For the Cream Cheese Frosting:(I only made 1/2 of the ingredient)

1 pound cream cheese, softened

2 sticks butter, softened

1 teaspoon vanilla extract

4 cups sifted confectioners' sugar

Chopped fresh raspberries or strawberries, for garnish( I use colour sprinkles since that the only that I have)



Directions

Preheat the oven to 350 degrees F. Line 2 (12-cup) muffin pans with cupcake papers.

In a medium mixing bowl, sift together the flour, sugar, baking soda, salt, and cocoa powder. In a large bowl gently beat together the oil, buttermilk, eggs, food coloring, vinegar, and vanilla with a handheld electric mixer. Add the sifted dry ingredients to the wet and mix until smooth and thoroughly combined.

Divide the batter evenly among the cupcake tins about 2/3 filled. Bake in oven for about 20 to 22 minutes, turning the pans once, half way through. Test the cupcakes with a toothpick for doneness. Remove from oven and cool completely before frosting.

For the Cream Cheese Frosting:

In a large mixing bowl, beat the cream cheese, butter and vanilla together until smooth. Add the sugar and on low speed, beat until incorporated. Increase the speed to high and mix until very light and fluffy.

Mika: This is what it look like. I don't know why Kak Dik love this cupcake so much! May be because of the cream cheese....

So moist, velvety look and definite a keeper recipe....

Marmer Chiffon Cake

Mika: I had little investigating to share with all of you but instead Yong insist want to share her excitement!


Yong: Well....thanks Mika. This is the excitement that I'm talking about. My first chiffon cake! Weeeeee.......I'm smiling until my jaw hurt!



Yong: This boy can't stop nagging...... is the cake ready!.....is the cake ready! He even stay at the kitchen to watch me mix the ingredients


Yong: The cake is so soft and not too sweet. You can see on top right, the cake has been pinched by Aqie! Thanks Kak Rima as usual for sharing this recipe. Here the recipe that I copied from Kak Rima (http://www.bisousatoi.com/)

MARMER CHIFFON CAKE

Ingredient A:

7 egg whites

1/2 tsp cream of tartar

100g sugar (I use caster sugar)


Ingredient B:

7 egg yolks

100g sugar ( I use caster sugar)

150ml full cream milk

75ml cooking oil

175g flour

1/2 tsp baking powder

1/2 tsp salt


1 tbsp chocolate powder

1 tsp chocolate paste ( I use chocolate emulco)


Method:

1) Stir B until blended. First, I whisk egg yolk and sugar, then add milk and cooking oil. Gently fold the sifted flour with baking powder and salt and set aside


2) Beat the egg white with cream of tartar until bubbly, add sugar a little at a time and continue to whip until soft peak


3. Take 1/3 of egg white mixture and add into egg yolk mixture.. fold in gently bef pouring the rest of egg yolk mixture into egg white. Divide batter equally into two portions and add cocoa powder and paste into one portion.


4. Spoon white batter and chocolate batter alternately into a 22cm chiffon pan.. bake it at 170C for 45mins.


5. Lift, turn the pan on the neck of the bottle, let stand until cold. Once cool, remove cake from pan with the help of a knife.
